GREEN ONION PANCAKES – CRISPY, SAVOURY & SO SIMPLE TO MAKE

Looking for a new way to enjoy green onions? These healthy pancakes put this everyday ingredient into the spotlight. Packed with flavour and surprisingly simple to make, this recipe will become a fun addition to your collection whether you prepare it for potlucks or as a side dish with meals.

Like other members of the allium (garlic) family, green onions contain beneficial antioxidants such as flavonoids and are a good source of vitamins K and C. Green onions also contain prebiotic compounds which help feed beneficial gut bacteria, an important factor in maintaining a healthy digestive system. One of the most incredible features of green onions is how easy they are to regrow. Simply put the white root ends in a small glass with enough water to cover the roots and keep on a sunny windowsill. Within a few days new green shoots will begin to grow, making this a simple tip to save you money at the grocers.
INGREDIENTS (4 Servings)

 Dough

  • 2 cups (500 ml) all-purpose or whole wheat flour
  • 2/3 cup (165 ml) warm water
  • 1 teaspoon (5 ml) salt

Filling

  • 6-8 green onions, finely sliced into rings
  • 1 Tablespoon (15 ml) sesame oil
  • ¼ teaspoon (1.25 ml) black pepper

Oil for Cooking

1 Tablespoon (15 ml) vegetable or peanut oil

Dipping Sauce

  • 2 Tablespoons (30 ml) soy sauce
  • 2 Tablespoons (30 ml) rice vinegar
  • 1 teaspoon (5 ml) sesame oil
  • 1 teaspoon (5 ml) sugar, optional
  • ½ teaspoon (2.5 ml) red chilli pepper flakes
  • 1 teaspoon (5 ml) thinly sliced green onions

Garnish

  • Thinly sliced green onions, optional

INSTRUCTIONS

  1. In a large bowl, mix the flour and a ½ teaspoon (2.5 ml) of salt.
  2. Add the warm water and stir until a rough dough forms.
  3. Knead for 5 minutes until the dough has a very smooth texture.
  4. Cover the bowl and rest the dough for 20 to 30 minutes.
  5. In a separate small bowl, mix the sliced green onions with the remaining salt, pepper, sugar (optional), soy sauce and sesame oil.
  6. To shape the pancakes, divide the dough into 4 pieces.
  7. With a rolling pin, roll each piece into a thin circle about 8 inches (20 cm) in diameter.
  8. Spread a thin layer of the green onion mixture onto each dough circle.
  9. With your fingers, roll each dough circle into a log and then coil into a spiral.
  10. Slightly flatten each spiral with a rolling pin into a pancake shape.
  11. Heat oil in a non-stick frying pan over medium heat. Cook each pancake for 2 to 3 minutes per side until golden.
  12. Serve with a garnish of freshly sliced green onions and soy dipping sauce.
